Polishing removes a very thin layer of clear coat so dullness and fine scratches disappear.
Over time paint loses its gloss to fine scratches and oxidation. Polishing levels the clear coat so it reflects light again.
One stage or two?
A one-stage polish suits paint in good shape that needs a refresh. Two stages start with cutting out scratches and finish with a final polish, for tired paint.
After polishing, add a protective layer to keep the result longer.
